Pai Mu Tan unfolds a multi-layered aroma that surprises you anew with every infusion. The first infusion offers a gentle sweetness with notes of forest honey, a velvety mouthfeel and subtle, floral accents that combine harmoniously with a slightly nutty note. The second infusion remains just as delicious before the tea becomes fruitier in the third infusion. You can infuse this Pai Mu Tan up to 5 times in total.
Origin
Pai Mu Tan comes from the Fuding region in Fujian, China, where the tea gardens are located at the highest points in the mountains. The plants are regularly shrouded in long-lasting fog and receive a light sea breeze from nearby, which is carried up by the wind. This special climate gives the tea its distinctive freshness and characterizes its clear, pure aroma.
Specialities
Pai Mu Tan, also known as “white peony”, stands out from other white teas due to its special depth of flavor and variety of aromas. While many white teas are rather delicate and floral, you can discover more complex aromas with Pai Mu Tan. Pai Mu Tan is not only made from the delicate buds, but also from young leaves of the Bai Hao cultivar, which gives it its more robust structure and rich aromas. The careful processing, in which the leaves are gently dried, preserves these diverse flavor nuances, which remain present even after several infusions.
